Let your tastebuds travel round the world with these ingenious bars

Phil Koury’s inspired idea is to celebrate a city a month in chocolate


Sometimes a chocolate comes along that has your name – or mine – all over it. For me, that bar would be something with a bit of crunch, a bit of chew, chunky and perhaps not restricted by piece size.

Phil Khoury used to be the head pastry chef at Harrods. In 2023, he brought out a baking book called A New Way To Bake which was all about plant-based cakes and desserts. Earlier this year, he left Harrods to do something else, and this summer we found out what – to start up his own chocolate company: Khourys.

The idea is that each month there will be a new bar in celebration of a city around the world. This is such a great idea that I’m amazed no one (have they?) has thought of it before. The first one launched with Beirut chocolate, which was originally created for a charity bake sale, but has made it into the permanent Khourys collection.

The Beirut bar comes in almond ‘milk’ or 63% dark variation. The 90g bar is a one-giant-piece bar filled with orange blossom caramel, cashew praline and baklava crunch base, £12.

Each month a new bar will be launched in limited quantities (the Beirut bar will be a mainstay), because everything is small scale and made by hand. The latest launch is London (Earl Grey and biscuits).

So expect things to be sold out and to have to wait, but then, we’re all a bit too used to having everything now and yesterday.

Anyway, this bar is wonderful, the base is probably the best base I’ve ever tasted in a bar. Some of my testers didn’t care for it, but they were immediately fired. I loved it and can’t wait to travel the world.
